Carolyn Williams – Human Environmental Sciences

Carolyn is in the process of completing her doctoral coursework in the College of Human Environmental Sciences. She completed her undergraduate degree in Food in Nutrition at the University of Alabama and has been a practicing Registered Dietitian since 2000. She worked as Assistant Food Editor for Southern Progress Corporation from 2000 until 2003 where she oversaw the creation of numerous Weight Watchers and Cooking Light publications. During that time, she also received her Masters degree in Education with an emphasis in Exercise Physiology.In 2004, she married and took a position in Nashville, TN serving as Food Applications Specialist for a corporate test kitchen. A native of Tuscaloosa, Carolyn returned to the University of Alabama to start work on her doctorate degree in 2006 and work in the Tuscaloosa area. She is currently a faculty member at Shelton State Community College for their Commercial Food Service and Culinary Arts programs, as well as adjunct faculty for the Department of Food and Nutrition at the University of Alabama. In her spare time, she enjoys spending time with her 18-month old daughter, Madeline, and her husband, Brian.
